RICK'S RICE 
4 lg. chicken breasts
1 lg. cucumber
2 to 3 celery stalks
Onion
Philly cream cheese
Swiss cheese
1 (16 oz.) beer
4 boxes Rice-A-Roni, chicken flavor
1 (8 oz.) Mozzarella cheese
1 lb. tomato

Step 1: Bake chicken 2 hours in casserole dish with beer, basting every 15 minutes, cook all rice following directions.

Step 2: Clean all chicken, debone, etc. then let soak in remaining beer and juice from previous cooking.

Step 3: In very large casserole dish empty half of rice in pregreased pan, then distribute cut celery over rice, then do the same with mostly drained chicken, distribute thickly, the add cut cucumber, apply 3 rows across, 15 or so for entire dish, then put small chunks of cream cheese using entire box throughout dish. Then add cut up onion using same idea.

Step 4: Pour remaining rice over and flatten out. Then add Mozzarella and Swiss cheese evenly, and melt down. Cook approximately 1 hour 15 minutes to 1 1/2 hours at 300 degrees when cheese browns or sides start to tan in center is done.

Step 5: Cut and serve adding an uncooked tomato slice on top of each serving.
