RAISIN CASHEW CLUSTERS | |
1 c. raisins 1 lb. dry roasted unsalted cashew nuts 1 lb. milk chocolate confectioners' coating (melting chips) Place raisins in a steamer basket over boiling water for 5 minutes. Let raisins stand at room temperature for at least 2 hours or until completely dry. Melt confectioners' coating over low heat. Remove from heat and stir in cashews. Add raisins. Mix well. Drop by teaspoons onto wax paper. Store tightly covered in a cool place until firm. Makes approximately 64 clusters. |
