POTATO TOMATO SOUP 
3 c. peeled and cubed potatoes
2 c. sliced onions
1/4 c. butter
1 (28 oz.) can stewed tomatoes
2 tsp. sugar
1 tsp. salt
1/8 tsp. pepper
6 c. boiling water
1 c. half and half

Prepare potatoes. Saute onions in butter until just tender. Add tomatoes, sugar, salt, and pepper. Simmer for 15 minutes. Add potatoes and water. Simmer until potatoes are tender, about 15 minutes. Stir in half and half and heat through.

NOTE: One-half teaspoon oregano, thyme, or rosemary may be crumbled into soup for a special herb flavor.
