JIFFY LEMON CHICKEN 
3 boneless chicken breasts, skinned
1/2 c. flour, more if needed
1 tsp. salt
1/4 tsp. pepper
3 tbsp. butter
1/2 lemon

Cut chicken into thin strips. Mix flour, salt and pepper. Then coat chicken into flour mixture. Fry floured chicken strips in heated butter, turning frequently until lightly browned, 2 to 3 minutes. Sprinkle juice from lemon over hot chicken pieces.

ALTERNATIVE: Use lemon pepper seasoning in place of salt and pepper. Use oil in place of butter for frying. Add a pat of butter at end of frying and toss chicken pieces a few seconds longer. Omit lemon juice.
