SMOTHERED MACKEREL 
1 (16 oz.) can mackerel
1/2 c. onion
1/2 bell pepper
1 (8 oz.) can tomato sauce
1 tbsp. olive oil
Dash cayenne

Saute onions and bell pepper with olive oil. Add mackerel and simmer for 10 minutes. Add tomato sauce and cayenne; simmer another 15 minutes. Serve over steamed rice.
