ANOTHER RAISED DOUGHNUT 
1 pkg. dry yeast
2 tbsp. warm water
1/2 c. sugar
1/2 tsp. nutmeg
1 c. milk, warm
1 egg
2 tbsp. melted butter
3 3/4 c. flour

Place the yeast in a large bowl. Add the warm water and stir to dissolve the yeast. Add the sugar and nutmeg, mix well and allow to stand 10 to 15 minutes. Add the egg, milk and melted butter. Gradually add the flour until a soft dough is formed. Make sure it is well mixed. Brush top of dough with a small amount of oil. Cover and let rise in a warm place until doubled, about 1 1/2 hours.

Working with half of the dough at a time, roll out on a floured board to about 1/2 inch thick. Cut with doughnut cutter and place on a cookie sheet which has been LIGHTLY floured. Let doughnuts rise until double. Fry in hot oil (about 350 degrees) in a deep pan. Put doughnuts in top, risen side down. Fry until brown, then turn to brown other side. Drain on absorbent paper. Fry a few at a time and beware of spatters of hot oil. Shake doughnuts while still warm in a paper bag with sugar and cinnamon. Makes about 2 dozen.
