BAKED MACARONI AND CHEESE 
1/2 stick butter
1/4 c. flour
2 c. milk
2 c. grated Cooper cheese
8 oz. box macaroni
1 tomato, sliced
Bread crumbs seasoned with Parmesan cheese
Salt and pepper

Cook macaroni according to package instructions. Melt butter and slow add flour until smooth. Add milk slowly, stirring constantly. Add cheese and stir over medium heat until cheese has melted and mixture thickens. Remove from heat. In an oven proof casserole dish, combine macaroni and cheese mixture. Arrange tomato slices over top of dish, and sprinkle with bread crumbs. Bake at 350 degrees until bubbly.
