NO BAKE FRUIT CAKE | |
1/2 c. evaporated milk 1 c. miniature marshmallows 1/4 c. orange juice or rum or brandy 3 c. graham cracker crumbs, rolled fine (4 doz.) 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/8 tsp. cloves 1 c. dates, finely cut 1/2 c. golden raisins 1/2 c. dark raisins 1 c. walnuts, broken 1 1/2 c. mixed candied fruits Line a 5-cup loaf or tube pan with foil. Spray with Pam. Put into a bowl and let stand the evaporated milk, marshmallows and orange juice (or other liquid). In a large bowl put all remaining ingredients. Add milk mixture. Mix with spoon and then with hands until all crumbs are moistened. Press firmly into pan. Decorate with additional nuts and fruits if desired. Cover tightly and chill in refrigerator 2 days before slicing. Keep in a cool place. Makes 2 1/2 pound fruit cake. |
