EASY BROCCOLI SOUP 
1 med. onion = 1 c. chopped
2 garlic cloves, minced
1 tbsp. olive oil
1/2 tsp. curry powder - more can be added if desired
Ground pepper
2 c. chicken broth
1 lb. broccoli - cut in flowerets - stems into 1/2 inch slices
1 potato, peel and diced
1 c. skim milk

In pan - put olive oil - onion and garlic - saute for 6-10 minutes. Add curry powder, broth - bring to boil. Add broccoli and potato. Boil again - reduce heat and simmer until vegetables are tender.

Cool ingredients - take 1/2 blenderize - return to pan with remaining vegetables. Stir in milk. Heat, do not boil. Serve with garlic bread. Serves 6.
