FRESH PEACH COBBLER 
2 qt. fresh peach slices
1 1/2 c. sugar
2 tbsp. cornstarch
1/2 tsp. salt
2 tbsp. lemon juice
1/2 tsp. almond extract
3 tbsp. butter

CHEESE TOPPING:

2 c. all-purpose biscuit mix
1 c. grated sharp cheese
4 tbsp. melted butter
2/3 c. milk

Place peach slices in a greased 9x13x2 inch baking pan. Mix sugar, cornstarch and salt; sprinkle evenly over peaches. Sprinkle on lemon juice and almond extract; dot with butter. Place in a preheated hot 400 degree oven until hot and bubbly, about 15 minutes.

Meanwhile, mix cheese topping. Measure biscuit mix into a small bowl; stir in grated cheese. Add melted butter and milk to make a soft dough. Stir with fork until blended. Remove peach mixture from oven. Drop dough onto peaches, making 12 biscuits. Put back in hot 400 degree oven for about 20 minutes.
