SPINACH - ARTICHOKE CASSEROLE 
1 1/2 sticks butter
3 (10 oz.) pkgs. frozen chopped spinach
1 1/2 (10 oz.) cans artichoke hearts (drain and quarter)
1 1/2 pt. sour cream
3/4 c. chopped onion
3/4 c. Parmesan cheese
Salt and pepper

Cook spinach; drain. Saute onion in butter. Mix all ingredients together. Pour into greased casserole. Bake at 350 degrees for 30 minutes. Serves 8-10.
