1 c. onion
1/2 to 1 lb. mushrooms
1 1/2 c. of grated Cheddar cheese
1 pkg. chopped spinach, squeezed dry
2 jars marinated artichokes, drained
5 eggs

Saute mushrooms and onions. Beat eggs and mix all ingredients together. Bake at 350 degrees for 45 minutes. Serves 6.
