BANANA CUSTARD PIE 
1 baked pie shell
1/2 c. sugar
1 tbsp. flour
1/2 tsp. salt
2 egg yolks, slightly beaten
1 c. scalded milk
1 tbsp. lemon juice
1 lg. banana, sliced

Bake and cool pie crust. Mix sugar, flour and salt. Add egg yolks, pour on scalded milk gradually, stirring constantly. Cook over medium heat in heavy pan, stirring until mixture thickens and boils. Cook 5 minutes, stirring occasionally.

Cool and add lemon juice and banana. Chill thoroughly. Spoon into pie shell. Cover with meringue from the two egg whites. Bake at 450 degrees until brown.
