VEAL OR CHICKEN CORDON BLEU | |
1/2 lb. boiled ham, sliced 1/2 lb. Swiss cheese, sliced 12 pieces veal or chicken cutlets, thinly sliced Flour Eggs, beaten Bread crumbs Cut ham and cheese into strips. Lay cutlets on table. Put a strip of ham and cheese on each cutlet, then roll tight. Add a toothpick to hold together if needed. Use three bowls, one for flour, one for bread crumbs, and one for eggs. Roll meat in flour, then in egg, then in bread crumbs. Put a little oil in a frying pan and fry rolled meat until brown. Place sauteed rolls in a roasting pan and cook in a 400 degree F. oven for about 20 minutes. Servings: 12-14. |
