FRIED RICE 
1 c. rice
1 lb ground beef
1 lb. hot sausage
5-6 stalks celery
1-3 med. onions, diced
1 lg. green pepper, cut in fairly lg. pieces
8 oz. can mushroom stems & pieces
Tabasco
Soy sauce
Pepper & salt

Cook the rice as directed on the rice package.

Brown the beef and sausage. Drain off the fat and liquid. Two or three tablespoons of the fat may be used in the saute of the vegetables but if a lower fat dish is desired, steam them in water.

Saute or steam the celery and pepper, add onions last and continue the process until the vegetables are slightly tender but still firm.

Combine all the cooked ingredients in a large pot over low heat.

Add Tabasco, soy sauce and pepper to taste. Salt should not be added if much soy sauce is used as it will make the dish too salty.

After the dish is well mixed and heated add the drained mushrooms and stir in, letting them warm in the mixture.

Serve the fried rice hot.

For covered dish meals, it is easy to cook all the ingredients even the day before and combine them over low heat and then after combining put in a covered casserole and put in the oven to heat thoroughly. Take to the meal in the casserole.

Other items such as sliced water chestnuts and bamboo shoots may be added along with the mushrooms and they will give a nice crunchy texture to the rice.
