PEACH COBBLER | |
FILLING: 5 c. sliced peaches 1/2 c. sugar 2 tbsp. flour 1 tbsp. lemon juice 1/2 tsp. vanilla 1/4 tsp. almond extract 1/2 tsp. cinnamon 1/4 tsp. salt 2 tbsp. butter BATTER: 1/2 c. unsifted all-purpose flour 1/2 c. sugar 1/2 tsp. baking powder 1/4 tsp. salt 2 tbsp. butter, softened 1 egg, slightly beaten Light cream or vanilla ice cream 1. In medium bowl combine peaches, 1/2 cup sugar, 2 tablespoons flour, lemon juice, vanilla and almond extracts, cinnamon, 1/4 teaspoon salt and 1/4 cup water. Pour 8 x 8 x 2 inch baking dish. Dot with 2 tablespoons butter. 2. Preheat oven to 375 degrees. 3. Combine batter ingredients and beat with a wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly. Batter will spread during baking. 4. Bake 35-40 minutes or until peaches are tender and crust is golden. Serve warm with cream or vanilla ice cream. Makes 9 servings. |
