LIVER CREOLE 
4 slices bacon
1 lb. sliced beef liver
3 tbsp. flour
1/3 c. chopped green pepper
1 can (16 oz.) tomatoes
1 to 1 1/2 tsp. salt
1/2 tsp. chili powder
1/8 tsp. cayenne red pepper

Fry bacon until crisp, remove bacon and drain off all but 3 tablespoons of fat. Coat liver with flour and brown in bacon fat. Stir in remaining ingredients except bacon. Cover tightly, simmer 20 minutes. Garnish with bacon.
