"BETTER THAN" SALAD 
3 c. cooked brown rice
1/2 c. finely chopped onion
1 c. mayonnaise or salad dressing
1 tsp. mustard
2 hard-boiled eggs, chopped
1/4 c. sweet pickle relish
Salt and pepper to taste

Combine all ingredients, mix thoroughly and chill. Serve 6.
