PEANUT BUTTER CUPCAKES 
1 1/4 c. flour
1/4 c. milk
1/4 c. peanut butter
1 egg
1 tbsp. butter
1 tbsp. vegetable oil
1 c. firmly packed light brown sugar
1 tsp. vanilla
1 1/2 tsp. baking powder
1/3 tsp. salt
1/2 c. semi-sweet chocolate chips
2/3 c. chopped honey roasted peanuts

Preheat oven to 350 degrees. Combine all ingredients except peanuts in blender. Cover and blend at high speed for about 45 seconds. Stop the motor once or twice to scrape down sides.

Pour into paper cup lined muffin tins. Fill each about 2/3 full. Bake for 25-30 minutes until toothpick comes out clean. Cool cupcakes completely.

Spread with frosting. Peanut Butter Frosting is recommended. Garnish with chopped honey roasted peanuts. Makes about 16 cupcakes.
