ORANGE CHICKEN A LA SKILLET | |
1 (3 lb.) chicken, cut up 1/2 c. (1 stick) butter 1/4 c. all-purpose flour 1/2 tsp. salt 1/4 tsp. pepper 2 tbsp. brown sugar 1/2 tsp. ginger 1 1/2 c. orange juice 1 1/2 c. water 1/2 tsp. liquid hot pepper seasoning 1 unpeeled orange 1 pkg. sweet potatoes, thawed About an hour before serving, sprinkle chicken with a little salt and paprika. In hot butter, in large skillet brown on all sides. Remove chicken from skillet. Into butter left in skillet, stir flour, salt, pepper, sugar, and ginger until smooth. Slowly stir in orange juice, water, and liquid pepper seasoning; cook stirring until mixture thickens and comes to a boil. Add chicken; cover; simmer 30 minutes. Slice orange 1/2 thick; quarter slices. Add to chicken, along with potatoes; cover; simmer 15 minutes, or until chicken is tender. Serves 4. |
