POACHED SALMON | |
12 oz. salmon fillets 1 inch piece of fresh ginger 4 tbsp. chopped fresh cilantro 1 tsp. minced garlic 1/4 c. dry white wine 2 tbsp. water Grate ginger; chop cilantro coarsely; place salmon, skin side down, in small heavy-bottomed pan; add 2 tablespoons cilantro, ginger and garlic to salmon; add wine and water; cover and simmer, cooking according to size of salmon at its thickest point, 8-10 minutes per inch. Serve salmon with pan juices and remaining cilantro. Serves 2-3. |
