SPICY DATE CAKE | |
1 1/2 c. chopped dates 1 1/4 c. boiling water 1 stick butter 1/4 c. peanut oil 1 1/4 c. sugar, divided 2 eggs, beaten 1 tsp. vanilla 3/4 c. semi-sweet chocolate chips 1/2 tsp. butter flavoring 1 1/2 c. flour 2 tsp. cinnamon 1 tsp. allspice 1 tsp. salt 1 tsp. baking soda 1/2 c. chopped walnuts Place dates in bowl, pour water over and let stand until dates are plump and cooled, about 30 minutes. Cream oil and butter with 1 cup sugar in medium bowl until light and fluffy. Mix in eggs, vanilla and butter flavor. Sift flour, cinnamon, allspice, salt and soda together in another bowl. Add flour mixture and date mixture alternately to butter mixture; blend well. Pour batter into greased and lightly floured 9 1/2 inch Bundt pan. Combine chocolate chips, walnuts and remaining sugar in small bowl, sprinkle over batter. Bake at 350 degrees for 35 to 40 minutes. |
