APPLESAUCE MUFFINS 
1 3/4 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. cloves
1 tsp. allspice
1 tsp. salt
1/2 c. shortening
1 c. sugar
1 egg
1 c. applesauce
1 c. raisins

Sift flour, measure and re-sift 3 times with soda, spices and salt. Cream shortening well and gradually blend in sugar. Beat in egg, then applesauce. Add flour mixture gradually, beating after each addition until well blended. Stir in raisins. Turn into muffin cups. Bake in moderate oven, 350 degrees, for 20 to 30 minutes.

To use as cupcakes, omit raisins, use paper cup liners and top with your favorite frosting (we make ordinary butter-powdered sugar frosting).
