SNOW BALLS 
2 c. sugar
1 stick butter
1 env. gelatin
1/4 c. water
1 pkg. coconut
2 pkgs. Mama's cookies or vanilla wafers (I use butter cream cookies with holes)
4 egg yolks
1 (No. 2) can pineapple
1 c. pecans
1 tbsp. vanilla
3 1/2 pts. whipping cream (I use Cool Whip)

Beat egg yolks. Add sugar and beat. Add pineapple and cook until thick. Cook over low heat or in double boiler. Add butter and stir about 5 minutes. Add gelatin which has been soaked in the 1/4 cup water. Add stiffly beaten egg whites. Add to this mixture pecans and vanilla. Chill. Spread between and on top of wafers using 3 to each ball. Ice with whipped cream and sprinkle with coconut. Can be frozen.
