PASSOVER SPINACH SQUARE 
1 lb. spinach, fresh or frozen
5 sq. matzos
5 eggs, separated
1 lb. cottage cheese
3 tbsp. sour cream
1/2 lb. sliced Edam cheese
Salt to taste

Preheat oven to 350 degrees. Cook spinach about 10 minutes in a pot on top of stove. In bowl, break up matzos, place cooked spinach in a colander and let juice moisten matzos. Spill off excess water. Mix in spinach.

In another bowl, mix egg yolks with cottage cheese, sour cream and salt. Fold in stiffly beaten egg whites.

In a 9 inch square glass baking pan, spread 1/4 inch of egg mixture. Top with two slices Edam cheese and then a layer of spinach mixture. Repeat layers until all ingredients are used. Bake 45 minutes or until firm.
