BANANA BREAD | |
1 c. brown sugar 1/2 c. butter 2 eggs 1 1/2 c. mashed bananas (3-4) 2 c. flour 3 tsp. baking powder 1/2 tsp. salt 1 c. walnuts, chopped (optional, or substitute coconut) Grease bottom only of loaf pan. Cream sugar and butter. Beat in eggs. Stir in banana. Stir together flour, baking powder, salt and walnuts or coconut. Stir flour mixture into banana mixture. Pour into pan. Bake at 350 degrees (325 degrees for glass) for 1 hour or until toothpick comes out clean. Remove from pan by gently sliding a table knife around sides to loosen. Turn onto wire rack, keeping loaf on side to avoid splitting. This freezes well. |
