PANSIT SALAD 
2 (3 oz.) pkg. Ramen style noodles
1 med. onion, cut into eighths
1 tbsp. sesame oil for frying
1 c. stir fry vegetables
1 c. shredded cabbage
2-3 slices crisp bacon, ham or salty meat

Vegetables such as carrots, diagonally sliced pea pods, diagonally sliced celery, etc.

Stir fry onion in oil until translucent. Add each of the other vegetables and cook until tender crisp. Season with 1/2 of the Ramen noodle seasoning packet. Boil the 2 packages of noodles in 2 cups water or broth until just done. Use 1 seasoning packet.

Add butter to the noodles so they do not stick. Toss in hot vegetables and bacon. Serve hot. Serves 4.

For convenience, vegetables can be prepared in advance, and reheated while noodles cook. This salad becomes a meal by adding cooked chicken or shrimp.
