LIMA - BEAN CASSEROLE 
3 c. frozen lg. lima beans
2 c. diced or sliced carrots
1 c. sliced celery
2 tbsp. chopped pimento
3 tbsp. minced onion
1 1/2 c. canned tomatoes
3 tbsp. butter
1/2 c. grated cheese

Cook beans and carrots until tender. Drain. Add celery, pimento, onion, tomatoes and butter. Pour into buttered casserole and top with strips of bacon or dots of butter. Bake in 350 degree oven for 45 minutes. Remove from oven and top with grated cheese.
