MAGIC FRUITCAKE 
1 pkg. mince meat
1 1/2 c. water
2 1/2 c. sifted flour
1 tsp. baking soda
2 eggs, lightly beaten
1 1/3 c. Eagle Brand milk
2 c. mixed candied fruit and peel
1 c. walnut meats, coarsely chopped

Break mince meat into pieces in medium size saucepan. Add water. Stir over medium heat until boiling, boil 1 minute. Stir occasionally. Cool. Butter 9-inch tube pan and line with waxed paper. Butter again. Sift flour and baking soda in large bowl.

Combine eggs, mince meat mixture, condensed milk, fruit and nuts. Fold in dry ingredients. Pour into greased pan. Bake in slow 300 degree oven for 2 hours, until center springs back when lightly touched and top is golden. Cool. Turn out of pan and remove paper.

NOTE: You can use 2 boxes of mince meat and 2 or 3 cups pecans for a darker cake.

This recipe was on the box of mincemeat from the 1970's. It is as good now as then. I use 3 x 5 baking pans instead of the bundt pan. Baking time is greatly reduced and the individual loaves can be shared. This is a good recipe for the beginner cook that thinks fruit cake must take forever. This is quick, easy and so good.
