MAGIC FRUITCAKE | |
1 pkg. mince meat 1 1/2 c. water 2 1/2 c. sifted flour 1 tsp. baking soda 2 eggs, lightly beaten 1 1/3 c. Eagle Brand milk 2 c. mixed candied fruit and peel 1 c. walnut meats, coarsely chopped Break mince meat into pieces in medium size saucepan. Add water. Stir over medium heat until boiling, boil 1 minute. Stir occasionally. Cool. Butter 9-inch tube pan and line with waxed paper. Butter again. Sift flour and baking soda in large bowl. Combine eggs, mince meat mixture, condensed milk, fruit and nuts. Fold in dry ingredients. Pour into greased pan. Bake in slow 300 degree oven for 2 hours, until center springs back when lightly touched and top is golden. Cool. Turn out of pan and remove paper. NOTE: You can use 2 boxes of mince meat and 2 or 3 cups pecans for a darker cake. |
