SIMON'S VEGETABLE SOUP 
2 lbs. beef (stew meat)
2 qts. cold water
2 tsp. sea salt
1/2 c. cabbage, shredded (purple is fine)
1/2 c. carrots, diced
1/2 c. celery, diced
2 tsp. green pepper
1 sm. onion
1/2 c. peas
1/2 c. potatoes, diced
1/4 lb. spinach, chopped
1 c. tomatoes
1/2 c. turnip, diced

Coat meat with flour and simmer in canola oil until brown. Also add onion, green pepper, celery, after browned. Add cold water and heat to boil. Simmer 3 hours until meat is tender. Add remaining ingredients and cook 1 hour longer or until vegetables are tender. Serves 6 to 8.
