SWEET AND SOUR CHICKEN 
2 (2 1/2-3 lb.) broiler fryer chickens
1 (8 oz.) bottle Russian dressing
1 env. onion soup mix (1 3/8 oz.)
1 (10 oz.) jar apricot preserves

Cut up chicken. Sprinkle each piece with a little salt and place in a shallow baking dish. Combine ingredients and pour over the chicken. Bake at 350 degrees for 1 1/2 hours.

Baste occasionally with the pan drippings. Serve hot with plain rice and the sweet and sour sauce (the pan drippings). Serves 6-8.
