SHRIMP WITH LIME GELATIN 
1 pkg. lime flavored gelatin
1 3/4 c. hot water
3 tbsp. lemon juice
1/4 tsp. salt
1 (12 oz.) carton (1 1/2 c.) cottage cheese, drained
Mayonnaise
Capers
Cooked (or canned) cleaned shrimp

1. Dissolve gelatin in hot water. Add lemon juice and salt. Pour into round ring molds. Chill until set.

2. Unmold on lettuce. Fill center with cottage cheese with dab of mayonnaise. Polka dot with capers. Drape shrimp over lime gelatin.

BOILED SHRIMP:

1 qt. water
1/2 stalk celery, sliced
1 carrot, sliced
1 sm. onion, sliced
Juice of 1/2 lemon
Salt & pepper
1 lb. shrimp, shelled & deveined

1. In a large saucepan bring 1 quart water to boil. Add the remaining ingredients except shrimp and boil 10-15 minutes.

2. Add the shrimp and simmer, uncovered, until pink, around 5 minutes. Drain or leave shrimp in broth until serving, as desired. Or refrigerate.
