EASY BROCCOLI SOUP 
1/4 c. chopped onion
3 tbsp. butter, melted
3 tbsp. all purpose flour
3 c. chicken broth
1 c. finely chopped fresh or frozen broccoli
1 sm. bay leaf
1/2 c. milk
1/2 tsp. pepper

Saute onion in butter until tender. Add flour, stirring well. Gradually stir in broth, broccoli and bay leaf. Cook over medium heat until broccoli are tender, stirring frequently. Reduce heat and remove bay leaf; stir in milk and pepper. Serve immediately. Yields 4 cups.
