BENEDICTINE SPREAD 
1 med.-sized cucumber, peeled and seeded
1 (8 oz.) pkg. cream cheese, softened
1/2 med.-sized onion, finely ground
Dash of salt
Dash of red pepper
Green food coloring

Grind cucumber pulp; place on cheesecloth and squeeze out the juice. Combine pulp with cream cheese, onion and seasonings, mixing thoroughly. Add a very small amount of food coloring-just enough to make the spread a pale green. The spread may be used to make sandwiches and canapes.
