VEAL AND SHRIMP WINDSOR 
1 lb. veal cut into medallions
8 shrimp
3 oz. butter
12 oz. tomato sauce
5 oz. brandy
2 oz. grated Parmesan cheese
5 oz. chicken broth
1/2 oz. salt
1/2 oz. black pepper
Flour

Put butter in pan over medium heat. When butter melts add floured veal and shrimp and cook until brown. Then turn veal and shrimp. Add brandy, tomato sauce, grated Parmesan cheese, chicken broth, salt and pepper. Cook 5 minutes or until sauce is thick and veal and shrimp are done. Yields 4 servings.
