LOW-CAL PINEAPPLE CAKE 
4 sm. pkg. Dream Whip, envelopes/dietetic
1 (16 oz.) box angel food cake mix, prepared directed on box or buy one
1 (20 oz.) can unsweetened crushed pineapple, drained
2 env. unflavored gelatin
4 tsp. Sweet and Low (sugar substitute)
4 tbsp. cold water
1 c. hot water
1 c. unsweetened coconut; optional

Mix gelatin in bowl with cold water. Add hot water. Stir well; add pineapple and Sweet and Low; stir again and put in refrigerator to jell (mix 4 envelopes Dream Whip topping). Add 1/2 of topping (refrigerate other 1/2) into gelatin mixture; divide cake and crumble half into bottom of 9 x 13 pan. Spread evenly and pour half gelatin mixture over cake. Then crumble 2nd half of cake over mixture along with gelatin mixture. Spread over 2nd half of Dream Whip overtop. Sprinkle with coconut (optional). Refrigerate.
