CARROT LOAF | |
2 c. shredded, cooked carrots 2 c. untoasted bread crumbs 1/2 c. finely diced celery 1/2 onion, chopped 2 tbsp. oil 2 eggs, beaten 1 1/2 c. milk 1 tsp. salt Mix ingredients lightly together and pour into an oiled pan or mold. Set in pan of hot water and bake 1 hour at 350 degrees. Unmold and garnish with peas, creamed or buttered, or simply serve loaf from baking dish. |
