HOLLANDAISE SAUCE 
2 egg yolks
1 tbsp. lemon juice
1 tbsp. water
7 tbsp. butter
salt
pepper
nutmeg
pinch of sugar

Mix all ingredients, except butter, in top of double boiler. Do not let water in bottom boil. Beat well, over moderate heat. Add butter and keep beating until sauce is rich and thick.
