QUICHE LORRAINE 
1 recipe basic crust
6 strips bacon
2 med. onions, chopped
1 1/2 c. Swiss cheese, shredded
1 tbsp. flour
4 eggs
2 (1 pt.) Half & Half
1 tsp. salt

Bake in preheated moderate oven (350 degrees), for 1 hour or until firm in center and golden brown. Fry bacon in skillet until crisp. Remove crisp pieces and saute onion in drippings for 5 minutes. Mix cheese and flour. Place cheese evenly into lined dish and top with crumbled crisp bacon and sauteed onions. In bowl, beat eggs with half & half and salt until smooth. Pour mixture evenly over filling, cook for 1 hour.

CRUST:

2 c. all-purpose flour
3/4 tsp. salt
2/3 c. shortening
1/4 to 1/3 c. ice water

In bowl, mix flour and salt, cut in shortening. Sprinkle with water. Knead lump until mixture forms into a ball. Roll out ball. Place into ungreased quiche dish.
