SUGAR-FREE RICE PUDDING 
1 env. vanilla pudding mix
3 c. milk
1/2 c. minute rice
1/8 tsp. nutmeg

Combine all ingredients in a saucepan. Stir over medium heat until mixture comes to a boil. Pour into serving dish. Place waxed paper over pudding. Chill 30 minutes; remove paper and stir to distribute rice. Makes 8 servings.
