RICE PUDDING (Sugar Free) 
16 servings: Each 117 calories, 1 fruit, 1 bread, 1/3 protein.

Soak for 24 hours, stirring once at 12 hours. 3 c. milk

When ready to cook, remove raisins and milk from refrigerator and set aside. Bring to a boil: 2/3 c. brown rice 2 tsp. cinnamon 1/4 tsp. nutmeg

Cover. Reduce heat to medium-low and simmer for 30 minutes. Turn off heat and let stand on the burner, still covered. Beat raisin milk mixture with: 3/4 c. thawed, unsweetened apple juice concentrate 1/3 c. nonfat dry milk

Stir the rice to cool it. Mix liquid and rice together and turn into an oil 2 quart baking dish. Bake at 350 degrees for 30-40 minutes. Serve chilled.
