CHICKEN FAJITAS 
1/4 c. cooking oil
1/4 c. vinegar
4 cloves minced garlic
2 tsp. oregano
2 tsp. season salt
1 tsp. cumin
1-2 tbsp. olive oil
1 fresh jalapeno
2 lbs. chicken breast, cut in strips
1 green pepper, cut into strips
1 yellow pepper, cut into strips
1 red onion, cut into thin wedges
Flour tortillas

Prepare marinade: cooking oil, vinegar, garlic, jalapeno, oregano, season salt, and cumin. Place chicken strips in one bowl and the peppers and onions in another bowl. Divide the marinade and pour over each and stir to coat. Leave in for 30 minutes.

Wrap tortillas in foil and heat at 350 degrees for 10 minutes. Drain vegetables and meat from marinade. Add 1 tablespoon olive oil to skillet and heat. Cook vegetables for 3 minutes and remove. Add another tablespoon of olive oil and cook chicken on high for 3 minutes. Return vegetables and heat. Wrap in tortilla shells with your favorite toppings (salsa, sour cream, cheese, tomatoes, lettuce, etc.)
