CHICKEN & MUSHROOM SOUP 
1/2 c. fresh mushrooms,
2 tbsp. butter
6 c. chicken broth (OR soup stock)
1 c. cooked chicken
1/2 c. white rice, uncooked
2 tbsp. fresh lemon juice
Green onions, chopped, for garnish

Saute mushrooms in butter. Add to chicken broth with chicken and rice. Cook until rice is puffy and add lemon juice and green onions before serving. Serves 6-8.
