OUT OF THIS WORLD CLAM CHOWDER 
5 to 8 strips bacon, fried, drained and crumbled
1 to 2 stalks of celery, finely chopped up
1 grated carrot
2 cans chopped clams
5 lg. cleaned cut into cubes potatoes
1/2 c. butter
3 c. milk
1 sm. chopped fine onion
1/2 c. flour
1 c. water
Salt and pepper

Fry onion, bacon, and celery in large pan. Add clam juice and potatoes and water. (Water should nearly cover the potatoes). Cook until potatoes are tender or about 15 minutes. In pan melt butter, stir in flour and than milk and cook until thick and add clams and set aside until potatoes are tender. Add milk mixture (white sauce) to potatoes to thin just add a little more milk. For added flavor add 1/2 cup sherry. (Forget the sherry if it offends you).
