MUSHROOM AND ONION QUICHE 
1 1/2 c. half and half or milk
4 eggs (slightly beaten)
1/2 tsp. salt
Dash of pepper
2 c. shredded Swiss or other cheese
2 tbsp. flour
1 lg. onion (chopped)
2 deep dish pie crusts
1/2 lb. or lg. can mushrooms (drained)
8 slices crisp bacon, if desired

Mix milk, eggs and seasoning. Beat well. Toss cheese with flour. Add cheese mixture and crumbled bacon to egg mixture. Pour into unbaked pie shell. Bake at 350 degrees 40-50 minutes until set and slightly brown.

I use a mixture of Mozzarella and Cheddar cheese.

Can use drained, chopped frozen spinach if desired.
