PRETZELS - SOFT 
3 3/4 c. all purpose flour
1 pkg. dry granulated yeast
1 c. lukewarm water
2 egg whits, unbeaten
1 tbsp. sugar
1 tsp. salt
1 tbsp. shortening
1 tbsp. water

Place 1 package dry granular yeast into 1/4 cup of lukewarm water and let soften 10 minutes. Put remaining 3/4 cup lukewarm water into a 4 quart bowl. Add 1 tablespoon sugar, 1 teaspoon salt, 1 tablespoon shortening and 1 cup of the flour. Beat until smooth. Beat in yeast mixture, then 1 egg white. Beat and stir in remaining 2 3/4 cups flour to make a stiff dough. Place on lightly floured board and knead until smooth. Divide dough among the children. (Recipe will make 10 to 12 letters.) Roll dough into strips about 10" long and 1/4" wide. Bend into letters. Brush on 1 slightly beaten egg white blended with 1 tablespoon water. Sprinkle with sesame seed or large flat salt crystals. Bake at 375 degrees for 9 to 10 minutes or until golden brown.
