JOHN'S SIMPLY GOOD COD CAKES 
These can be frozen and are a great quick meal!

50% fresh cod
50% mashed potatoes
salt, to taste

Poach the cod in 2-inches of lightly salted water, covering will speed it up (don't boil). The cod is done when flesh is opaque and flakes with a fork.

Gently roll the cod into your favorite mashed potatoes. Taste this mix while it is hot and add salt to taste. Once the mix is cool enough to touch make hamburger size patties.

Fry the patties in olive oil and/or butter, turn only once being sure they are brown before turning. Serve with your favorite vegetables.

Suggestions: great with eggs over easy or whole stewed tomato. Salting is the key, try generously salting a small portion to taste.
