2 c. hot water 2 tbsp. instant potatoes or 2 c. potato water from boiled potatoes 2 c. scalded whole milk 2 sticks butter 1 1/2 c. sugar 1 tbsp. salt 1/2 c. warm water 2 pkgs. active dry yeast 12 c. flour Mix together hot water and instant potatoes or potato water, scalded milk and butter and cool. Add sugar and salt. To warm water add dry yeast. Set 10 minutes and add to first mixture. Add flour. Put out on board. Add enough flour in kneading until not sticky. Let rise 15 minutes. Knead again. Let rise in warm place for 1 hour. Knead down, let rise until double. Squeeze out small balls, do not knead and place in pans. Let rise until double. Makes 64 rolls. Bake at 400 degrees for 12 minutes or until light brown. |
