GIN'S WORLD CLASS CHEESE CAKE 
24 oz. cream cheese (3 lg. package)
4 eggs
1 3/4 c. sugar
1 1/2 tsp. vanilla
4 tsp. lemon juice
16 graham crackers
1/4 c. confectioners' sugar
4 tbsp. melted butter
1/2 pt. sour cream
1/2 c. sugar
1 tsp. vanilla

Combine cream cheese, eggs, 1 3/4 cup sugar, 1 1/2 teaspoon vanilla and 4 teaspoon lemon juice. Beat 20 minutes on electric mixer (medium speed). Crush crackers and combine with confectioners' sugar and melted butter. Press into bottom of spring form pan to form bottom crust (don't line sides). Pour cheese mixture into pan on top of crust and bake 60 minutes at 350 degree oven. Cool 30 minutes. Frost with sour cream which has been mixed with 1/2 cup sugar, 1 teaspoon vanilla. Return to 425 degrees oven for 7 minutes. Chill 24 hours before serving (serves 12 or more).

GOOD CHEESE CAKE TOPPING:

1/4 c. currant jelly
1 tbsp. Curacao or lemon juice
Strawberries

Melt currant jelly and curacao or lemon juice together. Cool. Brush over strawberries placed on top of cheese cake.
