CURRANT GLAZED LEG OF LAMB 
4 - 4 1/2 lb. leg of lamb roast
1/4 c. red currant jelly
Garlic
Salt
Pepper

Place roast, fat side down on a microwave roasting rack, in a 2 quart glass baking dish. Spread with seasoning and with half of currant jelly. Microwave for 30 minutes on ROAST. Turn meat over and spread with remaining currant jelly. Continue cooking for 30 to 40 minutes, on ROAST, or until meat registers 180 degrees. Let stand, covered with foil, 10 minutes.

TIP: Microwave a lamb shoulder roast using the same technique cooking for 14 to 15 minutes per pound on ROAST.

Since microwave ovens vary in power, you may need to adjust your cooking time.
